Jam Filled Pastries (Kifle)
Dear Friends,
These jam-filled pastries are soft, comforting, and perfect for slow moments at home. This recipe was shared with me by my best friend’s mother — an incredible cook and woman — and it has become one I return to often. I hope it brings the same warmth to your home as it has to mine.
Ingredients:
1 tbs yeast
1 tsp salt
2 tbs sugar
2 cups lukewarm milk (110 degrees F)
2 eggs
1 cup oil
6 cups white flour
Directions:
In a mixing bowl, add sugar and salt on top of the yeast and mix. Then pour the lukewarm milk over it. Mix well and then add the eggs and oil. Add the flour slowly, and mix well with the dough attachment.
Let rise for 2 hours.
Roll out into a large circle (keep thickness at about 1/4 of an inch), cut into triangles, and add your favorite filling of choice to each triangle. Roll up crescent roll style. Brush lightly with milk and sprinkle with fine granulated sugar.
Bake at 350 degrees Fahrenheit for about 20 minutes or until golden brown on top.
